A few weeks ago I began my journey into "clean living", at least as much as possible. I began to see all the different additives, hormone disrupters, and preservatives in everything and honestly it was scary and exhausting. I wanted to know how to heal my body, but it was overwhelming! So I tried to find the simplest way to make changes and to make the changes piece by piece. That led me to butter!Â
Butter is made with one ingredient, truly just ONE. You can chose to add salt, herbs, spices, honey, etc. but in truth, you only need ONE ingredient to go on this endeavor. Because of the simplicity of this, I began my butter making journey, and in truth, I won't go back!
In this recipe, I chose to use my kitchen aid stand mixer, but you can use a jar with a lid to shake, a hand mixer, or a butter churner. Which ever method you chose, your butter will turn out wonderfully, this is truly a hard recipe to mess up, which is encouraging!
WHAT YOU'LL NEED:
Heavy cream
Your choice of mixing
Water
Bowl
ADD IN OPTIONS:
Salt
Herbs
Honey
Cinnamon
There are a few stages of butter making, first, the thick liquid of the heavy cream. Soon after you begin mixing, you'll see the heavy cream becomes foamy and light, you're in the right direction!
The longer you go, you'll see that the cream is beginning to curdle. (As pictured) This is good!! This is the beginning of the butter being separated from the cream. Keep going just a tad more until you see the butter sticking together.
After the cream has completely separated, you can drain out the butter milk and place the butter ball in an ice bath. You can choose to strain your buttermilk to get any missing clumps out, or you can save it. I chose to save it and make pancakes and biscuits with it!
In the ice/water bath, you'll continue to clean and squeeze your butter until the water dripping from it runs clean. This helps get any other buttermilk out and helps the butter from getting moldy sooner. Once the butter is cleaned, you can place it on a butter dish or wrap it in parchment paper and refrigerate!
INGREDIENTS:
Heavy cream (1 qt)
Salt or other add ins
WHAT YOU NEED:
Mixer (kitchen aid, butter churner, jar)
Bowl (for water)
Parchment paper or butter dish
Strainer
STEPS:
Pour heavy cream into your mixer of choice
Continue to mix until the butter separates completely
After butter has separated, strain butter milk out
Place butter into water bath
Squeeze out buttermilk/water unil it drips clear
